What: A gluten-free bakery

How: Taylor's mother’s health was in decline for several years prior to 2009 and she went from doctor to doctor looking for a reason. She finally explored the possibility that she had gluten sensitivity and started a gluten-free diet. She quickly noticed her symptoms of inflammation, pain and fatigue disappear. Taylor and his sister Sally, who co-founded the bakery with him in 2009, also discovered they both had a double gene for gluten sensitivity--inheriting the trait from both parents.
"We have all gone gluten free, and our inflammation levels have gone down," Taylor said. "In our bakery, you meet all walks of life, with so many different backgrounds of how gluten manifests itself in their systems. But inflammation is the common denominator."

In his own words: "We are a very niche operation, and all of our products are fresh with no preservatives. There are gluten-free consumer products in the store, but most have been frozen for months and are cheaply made. We wanted to share our experience of loving to bake but we are doing it a bit differently than we used to, modifying the recipes."
